Stuffed Peppers
Ingredients:
1-1/2
cups walnuts, soaked
1 cup fresh sweet basil
1/2 cup pine nuts, soaked
3 large cloves garlic
2/3 cup sundried tomatoes, rehydrated
4 red bell peppers
Instructions:
Process all ingredients except red bell peppers in a food processor fitted with the S-blade until homogenized. Stuff mixture into peppers that have been de-stemmed and seeds removed. Yields 3-4 servings.
